Curried Cashew and Red Lentil Burgers

Carnivores don't be fooled, this veggie burger is one to write home about. There are only so many vegetarian foods that provide us with the complete protein that we need to get through the day. Combining nuts and legumes is a great way to get all of the essential amino acids required to create a complete protein. We've been trying to cut back on soy (which seems to be turning up EVERYWHERE once we started paying attention) when we came across this recipe for cashew and lentil burgers. Of course we had to tweak it a little to our own liking, and wow was it incredible!

We give you Curried Red Lentil and Cashew Burgers to feed 4 hungry hippies

We will start off with ingredients:
1/2 cup unsalted cashews
2 Tbsp olive oil
4 cups mushrooms
1 large onion, chopped
4 cloves garlic, minced
1/4 tsp each salt and pepper
2 1/3 cup cooked red lentils (click here if you don't know how to cook lentils)
1 Tbsp curry paste
1/4 cup dry bread crumbs
1/4 cup cilantro
4 whole wheat hamburger buns or bread of your choice
4 leaves of lettuce
4 slices of tomato
optional Sriracha chili garlic sauce to taste

To get started, toast cashews on the stove over medium-low heat for about 5 minutes, or until fragrant. Once they're done, throw them into a food processor or blender, but don't blend yet.
Using the same skillet, heat 1 tbsp of oil over medium-high heat. Add mushrooms, onion, garlic, salt and pepper. Stir occasionally for about 5 minutes or until liquid is evaporated. Add to your toasted cashews in the food processor.
Add lentils and curry paste to food processor and pulse to combine. Mix in bread crumbs and cilantro. Shape into 4 1 inch patties. Make sure that your patties are tight and sturdy, you don't want them to fall apart!
Using that same skillet heat your last tbsp of oil over medium heat and fry patties until crispy, about 9 minutes on each side.
Make a sandwich out of each patty with lettuce and tomato. If you're feeling funky fresh, add a little Sriracha for some heat.

And voila, you have a mouthwatering complete protein vegetarian burger with no soy products.
